I’ve been wanting to eat these for a while but usually don’t find enough to make it worth the while. Yesterday we managed to pick a respectable basket of them and decided to candy them in haskap syrup. They ended up soaking up a lot of the syrup and being really tasty. The texture is kind of chewy, like a cross between fruit leather and gummy bears.

I couldn’t find a recipe I liked so just made my own. I made the haskap syrup by mixing the berries with sugar, about 1:1 or maybe a little less sugar. I boiled the berries and sugar for maybe 5-7 mins, careful not to let the pectin get to gel stage. I strained the solids out of the syrup and dumped the cleaned mushrooms into the syrup. Boiled for a couple minutes, took the pot off the heat and let it soak for an hour. Drained the syrup off of the mushrooms and dehydrated them until mostly dry.

    What part of the world are these found in?

      I found these in western canada but they are also found in asia and europe.
