Hello ! I’m new on Lemmy and want to understand how it works. My first question is about how the data linked to a account is handled. Does the instance I create my account on have an importance ? Should I look for the most reliable / EU based servers etc before creating a account ? My other question is about communities and instance joined, is that visible to everyone / server admins ?

The instance where you create your account does matter. Luckily, most of the popular instances are reliable and well run, so there are plenty of good options. This comment was my first introduction to how Lemmy federation works and I still think it’s very helpful for newcomers.

If you’re looking for a good EU server, lemmy.world is already one, but there are many others such as lemm.ee, lemmy.ml, sopuli.xyz, or the country feddits (feddit.de, feddit.uk, etc).
If your question is whether the list of your subscribed communities is public, I believe the answer is no. I don’t think you can see other accounts subscriptions/communities, admins may be able to do so but I’m not sure.
Btw you seem to have linked the lemmy.world support community as a URL in your post. You really just wanted to make a text post, you can just leave the URL field blank in the future. Like if you click the post, it takes you to the community where the post is located, instead of taking you to the actual post. Lol
