Dihydrocapsaicin is a capsaicinoid and analog and congener of capsaicin in chili peppers (capsicum). Like capsaicin, it is a spicy compound that contributes to the heat sensation when consuming peppers. It is found in smaller quantities than capsaicin, accounting for about 22% of the total capsaicinoid mixture.
