I guess they can’t squeeze anymore performance out of their GPUs so they just keep throwing more power at them instead.
They seem to be going in a tick-tock type cadence. 3000 series were very power-hungry, 4000 series were relatively more modest in power requirements. 5000 series is once again power hungry.
This going for a general increase in power consumption overall though.
