Liquidwar is an excellent amoeba style surrounding game.
Definitely worth a look for the uniqueness and fun level. Includes a comp AI, but a 2-4 multiplayer game will really make it shine.
I remember that for some reason I preferred LiquidWar5 over LiquidWar6. LW6 may have caught up, but take a look at both and choose your preference.
