I thought the classes were less an indication of danger and more how hard is it to contain

This is a misunderstanding of the classes, the classes are how difficult they are to contain. Apollion is something that can’t be contained. Thaumial is something that helps the SCP foundation or helps contain other scps. Keter is something that is extremely hard to contain. Euclid is something that requires a medium amount of effort. Safe is something that requires minimal effort to contain. Neutralised is something that is no longer anomalise. There are many other object classise but these are the most common.

I hear there’s also Iyov, where containment is believed to be possible but is still just theoretical (like SCP-001-J “The Broke God”, a financially-unstable deity who once tried flying a car into space to evade the IRS)

I’ve never heard of the first 2 classifications. Are there any entities in those classes I can read?
