    I love Indian food, but I hate having to clean up and do so many dishes afterwards. Do you have any recommendations for a good, low maintenance dish?

      I’d say the rice was easy: fry some mustard seeds and cumin seeds, add the rice, a bit of salt, the water, and pressure cook.

      The Aloo Gobi, also not bad: fry spices, add potato and cauliflower, fry a bit more, add some more spices (iirc), cover and cook a while.

      Now the tofu curry was a mess, haha. Used the food processor to grind onions, garlic, tomato, coconut yogurt and spices. Also baked the tofu separately. After all that it wasn’t too bad in terms of dishes, heh. This is the main reason I cooked this on a weekend, I need the extra time!
