That looks delicious! What does the cornstarch do to the tofu?
Helps make it crispier and tastier! I tossed the cubed tofu in a bowl with the cornstarch to coat, then fried in batches in a few tablespoons of oil. I had previously fried some shallots for another dish, and I used the saved oil from that, so they were gooood.
Gives it a crispy coating when you fry it

There’s also some mushrooms and water chestnuts hanging out in there, but they blend in with the brown tofu.
