Any of the Sam’s No. 3 locations in Denver are fantastic for typical brunch with a huge menu, NY Deli News on East Hampden Ave is a great Jewish deli/breakfast and lunch place, Lucille’s is a great creole style place with a couple locations in the area (huge biscuits)

Where in Colorado are you going? I miss living out there. I hope I can afford to retire somewhere on the Front Range.
I’m going to the Vail area. Colorado is utterly beautiful. Spent the first months of COVID there, it was a good place to hide out.
