I can’t speak as to the specifics of the picture, but in a blast furnace, you put in the materials in at the top of the furnace (as you can see a worker bringing coal or ore up to the top), and blow hot air in at the bottom. The waste gas goes up, and the molten metal sinks down where it can be collected.
