Early votes, either by person or by mail, can’t even start to be counted until after polls close on election day (generally 8 PM local time). This is to prevent early results from leaking and influencing the vote. So while early votes have been rolling in, they won’t be counted until the end of in person voting on Tuesday. There are other problems too that will extend the count well past Tuesday as well, Wisconsin for example has their own way of processing votes: https://www.wbur.org/onpoint/2024/10/22/wisconsin-voters-election-milwaukee-security-denier
