You weren’t to know but I’m on a gluten and dairy free diet, so sometimes it’s a bit frustrating watching great dishes and that I can’t eat without shitting my pants. And like you can’t really replace cheese. Butter, somewhat. I’ve also found even a decent gluten free spaghetti.
I’ll still watch it, because they’re mostly potato and I believe quite good gluten free ones exist. My therapist actually bought me a pack one time but i wasn’t too familiar with gnocchi dishes. Some ragu with it or? Hmm, the video will prolly tell.

I like him because a lot of his videos are about how to think about cooking, not necessarily recipes. Why certain flavors go well together, common mistakes and misconceptions, etc. He never presumes that the viewer is an expert and often suggests alternative ingredients (but mainly for meats, not gluten)
