Marinate potatoes in the olive oil + salt + spices first. Bake 375 for about 10 to 15 mins. Then add in marinated cauliflower (about 10 mins; taste till it seems close to done). Finally the peas carrots, and corn (also marinated).
Add lime cilantro to finish. my kids add butter and garlic salt on top of that and roll it into chappatis (or just eat it plain)
