Eggs and Greek yogurt whisked until combined, season appropriately with salt. Scramble, mixing in dijon mustard before they set.
Sour cream is often used, but I find Greek yogurt adds a certain funk that I like.

Edit: Ratio of about 3 eggs to 2tbsp yogurt. Dijon to taste, I add about a teaspoon.
