I buy beans here in Hanoi from a specialty roaster named Viet Beans Coffee. They exclusively use beans grown in Vietnam and have a large variety of bean types with washed, honey, or natural processing options being most common from different regions of Vietnam. Some times experimental processing is offered. The roast level is traditional light roast unless otherwise requested. They don’t normally do Nordic light, ultra light, or more roasted than medium.

This is the bean I am currently enjoying at work using a Clever Dripper and Fellow Opus grinder.

The flavor notes are pretty much exactly what I am getting in the cup.

Oh, didn’t knew, I assumed that with the words honey and bourbon there were some caramelization process involved. Thanks for the info!

Sorry the late reply. Bourbon is a varietal of the Arabica bean. Arabica has several varietals like Typica and Bourbon.

Honey processing doesn’t involve honey, it is one of the three main processing types prior to drying the green beans. The most common processes are Washed and Natural with Honey coming in third.
