Risotto. It’s not hard at all, the only semi difficult part is that you have to stir frequently.
If you have a pressure cooker, it’s even easier because it eliminates most of the stirring
I don’t mind it, as I just use it as an excuse to read even more than I usually do.
We make no-stir risotto in a Dutch oven, I’m sure a deep-ish cast iron with a lid would work as well. We use a cast iron camping pot from Ozark.
