Small farms sell to livestock auctions.

Those tend to have buyers from large meat processing plants.

That meat is then sold as premium grade, usually steak and roast cuts.

The rest is then used for ground meat, or pet feed.

Unless it’s chicken. Then everyone is in the same leaky boat. Seriously, chicken is nasty. Every single country in the world has switched to fast growing chicks, that need to be slaughtered long before adulthood because they get too big to survive on their own.

Then they’re too young to really develop flavor, so the processed meat has to be plumped further with injections of salted chicken broth.
