I don’t know about blooming, but I had a smoked balogna sandwich at a local BBQ restaurant a little while back and it was actually delicious! I have always hated balogna, but tried it when it was refommended by the owner. According to the chef the trick was using a high quality balogna.
I’m fine enough with Oscar Meyer, but a real bologna from the deli is so much better. A brand like Boar’s Head or Publx. It’s a completely different experience. German bologna is favorite, with garlic bologna also good.
