minus-square@BigBlackCockroachOPlink2•1 year agoWow thanks for the insight, I had no idea about this. I thought it was solely the wood of the barrel giving off flavors over time. It’s kind of surprising to me that these substances will vanish over time.
Longer they age in the barrel the more the sulfates and other undesirables pass out of the whiskey. That might be something to do with it.
