Just trying to figure out if I’m doing something wrong. Subs to local communities are instant, but when I add stuff from others (e.g. lemmy.ml), it just says it’s “pending” for days.

It’s a known bug that is to be eliminated with upcoming versions.
You’re actually subscribed, it’s just a visual effect.
