It works because whatever you’re ysing to view the ‘jpeg’ also supports webp.
When you run into a situation where the jpeg format is required, your method won’t work because the file is still encoded as a webp rather than a jpeg
If I remember correctly this is how I tricked some “smart” tv though. It wouldn’t play .mp4 files or something but had no problem when I renamed them .avi.
That’s not how filetypes work.

It’s a workaround if you’re on Windows and file extensions determine the program that opens the file
Or you could just configure the file extension associations so that webp opens with some program you have that supports it.
