You could, but you’d be missing the tang the vinegar gives. If you’re going to boof it, I guess you don’t need the vinegar. An alcohol extract would basically be pepper vodka, not hot sauce… I’ve made that with habaneros and serranos, and I loved it, as a drink.
Please use the Scorpion or at least the Habanero Tabasco. They’re really much better.
