    I have eaten it before, but not made it myself. This recipe seems pretty solid though, and is volumetric if you’re not used to using a scale for bread.

    If you want other recipes, it’s called Dutch Crunch, Tiger Bread, Tijgerbrood, or Giraffe Bread.

    You can do it in any bread really, if you have a recipe you like already. You brush the rice flour paste on top, and that hardens and cracks while the bread expands in the oven. It gives a visual and textural contrast rather than it actually tasting different. Just don’t go too thick with the coating, or the roof of your mouth will be sorry.

    This technique is also good for other fun things like crackle paint. Put a quick drying paint on top of a slow drying paint, or this method uses a glue layer and is probably less finicky.
