I used to dredge bread though the batter before frying. I changed my tactics. Now I butter one side of the bread and place it face down in the skillet at medium heat. Then I basically egg wash (basting brush) the other side of the bread before flipping it. This is egg frugal.

2 eggs_ Splash of vanilla extract_ Splash of almond extract_ Blend with fork_ I prefer English muffin bread if I can get it.

Any suggestions how I can improve on this?

    How many breads are you getting out of this? Even with regular soaking i usually get two slices out of an egg. Are you feeding multiple folks on two eggs?

      Add a little milk to the eggs to stretch it.

    I’ll have to try the splash of vanilla extract next time. That’ll go nicely with the cinnamon!

      Can highly recommend the vanilla, although the good stuff isn’t terribly frugal. When feeling lavish, I can also recommend basting both sides of the bread in egg mix, and buttering the pan instead. Then re-butter the pan before flipping (remove, wipe, butter, replace on flipside).

      Serve with sprinkle of sugar, and a generous twist of juice from a garden lemon. drools

        I definitely get the imitation stuff. No idea if that’s complete poison compared to the real thing. That sounds amazing btw. Gonna make my wife some good french toast lol

    I’ve switched to using a recipe that involves separating the eggs and only using the yolks plus milk or cream and sugar. Because of the dairy it’s less frugal but the taste and texture is better.
