I have found at least 4 ‘Hong Kong’ communities hosted at different Lemmy instances.
I think the key is to educate and spread the info so eventually one of these instances will become the most dominant, and users will eventually have the knowledge to all migrate to it.
So please help as much as possible to help spread the word:

Use https://browse.feddit.de/ to do subreddit community search - this will allow you to search across the board, showing all communities across all instances that match the search criteria.

Pick the one with the most subscribers and subscribe to that community by doing this: copy the URL of the community you will subscribe to with the copy icon next to the community in search results, go back to your own lemmy instance, login, then click on the magnifying glass icon to initiate a search, then paste the copied URL. Wait for a few seconds for communications to happen, and you will see the community listed in the search result. Now click on it, then subscribe.
Hopefully we won’t end up in an chaotic situation where there are multiple and totally separate Hong Kong communities.
Hint - after you use the magnifying glass icon and paste the URL, it will very likely say ‘No Result’ while in the background it continues to reach out to the remote instance. Keep waiting for maybe a minute or so at the most, and the remote community will be shown.
NOTE: The https://lemmygrad.ml/c/hongkong community seems to be very pro-Beijing, although it also seems currently it has the most number of subscribers according to the Lemmy Community-Browser.
FYI, Lemmygrad is a communist, Marxist-Leninist community. If you disagree with their politics, you might want to stay away from there.
As for the multiple instances, one community will grow organically and eventually become the “default” community for most people.The benefit of having more communities is that they can all be moderated differently and people can have their own smaller communities on their own instance. Some people may not want to be in a huge community where they might not agree with the majority. And that’s one of the beauties of the fediverse. Each person can choose where they want to be and not be “forced” to one instance.
Oh, and you should also see if the instance you want to be the main community actually wants to be the main community. They may already have their own plan or they might not even want to be the main one.
Yeah I see you point. For Reddit refugees like me who are very new to Lemmy however, the whole concept of federated communities can be a bit overwhelming at first. For instance I even had difficulty searching for communities I want to be in.
I do agree, it can be a bit confusing coming from reddit. It works the same, yet much different lol
But remember that while lemmy itself has been around for a couple of years, the mass adoption of it is new. There are a lot of instances that are new so the communities aren’t established yet. The best ways I’ve found communities are either through browsing all/new or by visiting other instances and looking at their forntpage or community list. Just gotta be patient and see how things flow. You’ll get the hang of things and realize it’s not as daunting as you originally thought.
Yeah, lemmy.ml / lemmygrad.ml are both tankies haha, how bout no. Tbh, even on Reddit there were two Hong Kong subs, I don’t see it as a problem; you pick the one you prefer, that’s the point of federation. If you disagree on politics, you can go to another instance.
this one - the legitimate community
The one we’re in looks like the only legitimate (i.e., non-fascist) HK community that’s remotely active at the moment. Hopefully people will just consolidate around this one
Not gonna lie, I miss the activity over at the HK subreddit. But I haven’t logged on since the reddit blackout… Has the HK sub there been impacted at all?
Not sure, since I haven’t either. Think it will just take a while for things to get going for regional instances and communities over here
