Have you seen how thin bok choy is? They’d keep putting the little needles to inject it right through, that’d be a mess.
You could inject it in longways
They basically do, it’s called kimchi/sauerkraut.
I know not all preparations of kimchi are vegan, but that doesn’t affect the B12 :)
