So, I’ve been using some Vertex V One’s, and they sound marbles and creamy and I’m very much enjoying them.

I just got a sample pack of 27 switches, and none of them sound nearly as good imo. After doing some research, it seems they bottom out a bit differently

The V1 switch’s stem is round-headed, and its bottom-out style is the stem head bottoming out instead of the stem sides bottoming out. This gives the switch a concentrated sound profile.

I’m trying to find other switches that bottom out similarly, and hopefully have options around 65-67G

one possible option to look for in switch descriptions is “long pole” – the pole underneath the stem is lengthened to ensure it bottoms out before any other part of the stem – sometimes this can lead to shorter travel distance (3.5mm to 3.8mm instead of 4mm) but that all depends on designers and molds and manufacturers

would custom keyboard components like this lend itself to an open source 3D printing community solution?

Possibly. I did find (based on the other comment) a lot of other options. I didn’t realize “long stem” switches were a thing :P
