Every time I use Super + T to open a terminal window, it’s much smaller than I prefer. It’s also centered on screen but I prefer it to be slightly off center to the right a bit.
Is there a way I can make new windows open to my preferences every time?

You can change the default size in Terminal settings. Go to the default profile, I believe it’s called Pop. Then change the number of columns and rows to what you prefer.
You can’t change the placement though. The only thing you can do is globally change the window placement rules in Gnome Tweaks to avoid overlapping.
Gnome Tweaks will also let you set new windows to open centered, instead of top of left.
