Last year I bought a knife sharpening set for the first time and it made a world of difference. This year I’m trying to establish an annual sharpening to keep them nice and sharp.
What kind of set you use? I’ve had a whetstone but got tired of it cause it takes a while to set up and soak, and it was hard to make a good edge on my curved kitchen knives.
Now I use a 3 stage coarseness “drag the blade through the V groove” sharpener, usually only use the 2 finer settings, but it seems to wear out and get a less fine edge over time.
I have the Lansky 5 stone system. I like it because it gets the angles right with little fuss and without breaking the bank. You can buy a stand to hold it up on, but I’ve been satisfied just using a squeeze clamp to hold the included Lansky knife clamp to the counter top.

This is a skill that is easy to learn but almost impossible to master in my experience. I can get a knife pretty sharp…but I can never get them “perfectly” sharp
An old leather belt and some stropping compound off Amazon to polish the edge from time to time really extends the life of the edge.
Congrats! Sharp knives are one of my favorite “little joys” in life, so satisfying
Consider a quick sharpening once every six weeks instead.
