And how can I remove or reset them? They are not my subscriptions, are they communities I clicked on at some point? Although there are some I don’t remember ever seeing.

If you are talking about the left side panel, the communities are grouped into two groups: bookmarks and subscriptions.
Bookmarks are entirely client sided and are much more powerful. They are unique to Summit and are per user (as opposed to per account). Bookmarks are supposed to be a more flexible way for you to curate your feeds. Eg. you can bookmark special feeds such as your subscribed feed. You can also bookmark mutli-community feeds (eg. you can group 3 communities together and have them show up as one feed).
Subscriptions are server sided. They follow you on other apps or on the website.
In both cases these are added by the user. They are not auto-populated by the client. Maybe you accidentally tapped something? To remove a bookmark you can long tap on one and tap “Remove”.

I also just noticed that the top says error, and also that the communities in the list that I am subscribed to are an absolute minority, the most are not from my subscriptions.
Eg I am not subscribed to reddit, technology, news, no stupid questions, or really most of the other things in that list.
Try the ‘my communities’ option within the fab button on the feed page.
That shows my subscriptions, yes. But what are the other ones in the sidebar? Just random communities? How can I disable that, I really don’t want to see NSFW content, or Nintendo stuff.
You can technically not scroll down as a crappy workaround for now. From your screenshot it looks like you are only able to see one of the suggested communities only. If you do not scroll down you will not see any of the others. I will try to get to a real fix but no guarantees on the time.

I am not subscribed to Nintendo, Lemmy world, announcements or gone wild. The last one is especially baffling because I don’t have NSFW enabled and I am not into women so there is zero chance I even clicked on that at any point.
I’d like to have it out of my list. Not that there is anything wrong with being gay or looking at porn but I’d rather not see random communities, especially NSFW ones.
Oh this list is just the top communities at the time you open the sheet. It’s not chosen by the app or anything. I’ll add a roadmap item to add a setting to disable these suggestions.
