See especially the vertex color skyboxes (album). Some other stuff (soot, glowing effects) used vertex colors but skyboxes (and specifically using the mesh to fake hard-edge colors) is a really smart and A E S T H E T I C method that only got better with the ability to render PS1 games with higher internal res.
