Long before “regional ramen” was even a thing in Japan, the very first one I ever tried was Bankai Shokudo in Kitakata. Today, it has grown into a nationwide chain known as Kitakata Ramen Banrai. It features a clear, light pork-bone broth paired with uniquely chewy, flat curly noodles.
