      Its a thai red curry paste and coconut milk mostly, but I added a few lime leaves because they’re delicious

        What’s the brand, just curious? Most of the curry pastes I see have some sort of animal product in them.

          Yeah most curry pastes contain shrimp paste and fish sauce. If you want a vegan Thai curry, your best bet is to make your own from scratch, since there don’t seem to be any Thai brands marketing a reliably vegan product (reports vary).

          Since the very strong salty, complex, umami flavours of fish sauce and shrimp paste are so important to Thai curry you should look for vegan alternatives to them rather than just leaving them out, otherwise you’ll get a very flat flavour.

          Check out this guide to common Thai pantry staples, which includes some vegan options as needed (many of them are already vegan).

          Aroy-d doesn’t have anything weird in their red or green curry pastes, no fish.

          You can always make your own though! This recipe is not vegan because of shrimp paste, but they mention good vegan options and it’s a solid recipe otherwise:

    Can’t say I’ve ever had mushrooms in curry… but also don’t eat much curry beyond Japanese and thai green curry, I’m intrigued. Care to share your recipe?
