Had a special Chukasoba for ¥1,200 at Ganso Yakibuta Center Chukasoba Santo tonight. Man, this is exactly what ramen should be.

I know ramen has its origins in China, but “Chukasoba” hits different for those of us who grew up in the Showa era. The “Chuka” in Chukasoba isn’t really meant to mean China—it just has that nostalgic feel.

Not super-heavy, not trendy or fancy. Just solid, traditional Chukasoba. This is the kind of ramen I love.
