I’ve been feeding my starter religiously, at least once, sometimes twice a day, and I’ve been seeing larger, but very irregular holes.

I’m not entirely sure what’s going on, but it’s a new development, so i need a lot of repetition before making any more major changes

Update: as I’ve eaten my way through the most recent loaf, I uncovered this gorgeous section Still far from perfect, but much closer to what i want

    Holes are open crumb and many people like that.

    Giant holes are tunneling and usually a sign of underproofing.

      I know they aren’t ideal, but i don’t believe it’s underproofed
