Perhaps a miniseries from KOTOR. One or two episodes per planet. Might be too generic though.
EDIT: if that’s too predictable, then I guess anything to do with the more or less distant past. There is a long lore preceding what happens in the movies, and it hasn’t been touched on in film/tv.
You could make a Game of Thrones style show set in the Old Republic. It would be great.
Such a show could be great, but would also require talented creators to pull off. The current disney shows don’t really strike me as something that would precede such masterpiece.
Look at Andor. If they’re open to breaking the mold, shows can be extremely well written.

I’d like to see a show that is comprised of low stakes single episode plots. Each episode would feature different characters and take place during those periods of time the movies skip over. They’d largely be about character development, world building, comedy, or just following up on untold stories.
Some Examples:

Hoth/Yavin prior to the Empire’s discovery

I’d love to get some back story from that dude from Rogue Squadron.

I think something completely new like the old republic could be fun. Maybe a Darth Bane trilogy? The Skywalker arc and related stories are getting old.
I want to see them go a few hundred years in the future. Really get into some uncharted territory and let some qualify writers try something new.
Star Wars has a knack for showing us a state of the galaxy, and then filling in how we got there after the fact.
I would love to see they old republic and more Sith academy v. Jedi academy action
Shaking the table but Rey establishing a new Jedi Order. I’d love to see what she gets out of the first texts and how she’d go about learning the lesson of the previous Orders, attempting to do better.
Back before Rise of Skywalker released there was brief speculation that the new Order would be called “Skywalkers…” man, I wish that had come true. It’d have been kind of dope.
(I mean they could technically still do it if they wanted)
I’ve not played a bunch of The Old Republic but I’d love a series about the cowboy looking guy from this trailer… He seems fun…
