I’ve been hitting him constantly and let him heal to full again a few times and he just won’t go down, I tried using the pickaxe I suddenly got in my inventory but it was the same thing he just kept healing, what do I do?!?

You can’t, he’s invincible and will regenerate. Go eat.
So what’s the point of him if he is invincible?
To force you to play differently by taking advantage of his slow speed to avoid him instead of confronting him directly.
If you tao the 🔎 icon once, you can click any tile or creature to examine it.
You avoid them until you have all gold collected and get to the boss. They make the first crystal cave fight a lot longer.
Like everything else in the game, you examine it and use your brain. 😉
