I’ve never had eggplant; only opportunity I’ve had would be buying one and doing something with it myself and I don’t know if I’d like it to wanna do all that work lol. What does it taste like?
Grilled eggplant with olive oil and Parmesan is top notch ! This time I didn’t have Parmesan. The pizza was delicious, the eggplant gave some freshness and texture to a pizza that is otherwise a bit oily because of the cheese. I should adjust my cheese combination with something leaner for next time.

Just slice it thinly and fry in an oily pan. Salt and pepper, that’s it. Tastes like eggplant.
