minus-square@Custosliberalink36•1 year agoSo the difference is that in beef tartare the beef is fresh and only the surface has had the opportunity to be exposed to bacteria. Because store bought mince has been mixed together the surface bacteria has mixed with the rest of the meat increasing risk. If you’ve made this fresh though, yeah you’re right, the risk is manageable.
