Medieval Dynasty is a nice relaxed survival craft/build game where you develop from your house in the woods to a village with working residents.
You can tweak all the survival elements to take the pressure off or speed up the game to your leisure.
There’s some basic bandits and wild animals to add a bit of jeopardy.
