Our cucumber plant is going bonkers.
Fantastic. I don’t know if you plan to pickle them but I love that bumpy texture in a pickle.
One time my cucumber plant was just going insane and I had some that I picked too late. If you get to that point, try what I did:
- put a few in the fridge until chilled
- slice lengthwise and scoop out the seeds with a spoon
- run the chilled seed mash all over your face on a hot day
Heaven.
I was not expecting to read that last sentence. But now I’m curious to try it.
Hollow them out a little more and you could use the shells as tiny gazpacho bowls or to serve watermelon feta salad.
Man, watermelon and feta sounds unexpectedly amazing, would have never considered that flavor combination
It’s really good. Add a bit of mint and olive oil, maybe some balsamic or a squeeze of lemon.
I will have to keep in mind, that genuinely sounds delightful!
I was not expecting #3. But I’m kind of curious now.
I have to go away for a week. I’m really concerned what size cucumbers I’m going to come back to.
I harvested my first cucumbers yesterday.
Will be traveling for the next two weeks. Hopefully my neighbor who is checking in on the house will enjoy them.
