Theme defaults to dark mode 24/7 even though I’ve set both options up and toggled the match system button.
I saw an earlier similar post but my case isn’t fixable by toggling the button on and off.

Me too! On both current App Store and test flight.
Theme changed automatically today after the last update. Fixed for anyone else?
Edit: I take it back, now it just defaults to light lode instead.
