This is a stupid simple meal that is very satisfying. You can use sour cream instead of avocado to cut costs but don’t try and use both because it will overwhelm the potato goodness.

    I am recovering addict of taco bell but I will say the had that patatoe cheeze wrap and that was on the cheap cheap! This also look way better

      I like their spicy potato soft taco which is on the value menu. But sometimes their potatoes are extra firm. No bueno.

      Cut, with skins on. Like you are doing mashed potatoes. Boil in salted water until fork tender. Drain.

      You can also do this with fried potatoes. Or French fries. Whatever you got or can make. These weren’t very common in San Diego but there was a Mexican taco shop on El Cajon Blvd and Park Blvd that had these with sour cream and cheese. They were a vegetarian masterpiece.

      Bahia Mexican Food is the name. I just checked their Google Maps listing and they still have it on the menu all these decades later. $11.75 and no avocado.

        After boiling try letting them dry in a collander for a few minutes then gently shake them to rough up the outside and air fry or shallow fry them to get super crispy
