    Fun fact, the brandname doritos are made

    1. via cooking and soaking corn grains for many hours
    2. weight separation for removal of softened husks
    3. grinding process
    4. lightly pressurized extrusion (higher pressure results in more fluff such as corn puffs and funyuns)
    5. rolling and cutting to shape
    6. heating in a special oven at 340 degrees CELSIUS for 16 seconds
    7. Frying in oil at 182 degrees celsius

    Supposedly, the oven sears the chips to hold moisture in while frying. The chips themselves have about 40% moisture before cooking.

    You’ve got me curious how air-fried corn tortillas would taste.

    Those look delish, but the amount of oil would be prohibitive for me.

      I’m sure with a little spritz of oil and they would be close to the same. I used corn oil, but maybe if you use canola it would be a little healthier.

        Tonight I’m screwing around by toasting a couple small tamales in the AF… absolutely not the way that’s supposed to go. 😄

      Did not make the tortillas from scratch, they were clearance and too cheap to say no to. I shallow fried them in corn oil and used a ranch packet mix I usually mix with sour cream to dip carrots in.

      I’ve heard ranch powder + paprika. I’ve done that + a bit of chili powder to make cool ranch seasoning for popcorn that tasted pretty spot-on to me. No measurements, but just mix and match until it tastes correct.
