I followed all the except the pansexual bit. Is that cannon?

even if it’s a likely mistranslation, the OP is trying to emphasise a bit too much of how diverse and progressive avatar is.
Don’t get me wrong, Avatar is progressive in the greatest of ways; realistic , empowering and subtle, but some of the statements are exaggerated and out of context.
One thing to take note of how great it is at progessive depictions is that in team avatar, there’s a person with an obvious IRL disability, and a relative , literal and fictional “lack of ability”, and both characters are treated as valuable additions to the team, while showing they are treated as their behaviour and demeanor demands they be treated.
Toph and Sokka. Toph is blind, and takes herself seriously while acknowledging they perceive the world differently. They are worthwhile and valued through their earthbending, but their limitations with lack of sight when putting up posters or needing to read or see into the distance gets shown too.
Sokka is the only Non bender on “team avatar” and is treated like a fool not because he can’t element bend, but because he is a fool, but they respect his abilities as a warrior and as a person that can deal with practical issues that the team faces. He is dis-abled because he does not have an element bending ability.
Toph’s sightedness jokes are so on point and at the same time respectful, it’s a masterclass. My favorites are when
- She yells “there!” pointing down when they are flying on Appa searching for something;
- She hides them in a pocket in the ground and someone yelps “I can’t see! There’s no light” and she goes “oh no, that’s terrible! How could we cope?” very sarcastically.
My favourite is the poster gag. “Why do I need to go with Sokka to put up posters?!”

Yeah … all his romantic interests are entirely focused on Katara. Even if he is pansexual or something, that’s never really shown and never really matters, because he’s pretty much exclusively attracted to just one girl.
Also – he’s not vegan, he’s vegetarian.
In The Great Divide, he very much wants an egg custard tart. Eggs are okay for vegetarians, but not vegans. (And, also, he describes himself as a vegetarian.)

When I studied alchemy I was so confused as to why avatar used the western 4 element version instead of the 5 element Wuxing then I realized the Japanese / Shinto also often use a 4 element version because apparently a lot of it goes back to a mutual origin in Buddhism. (Well sort of 4, they both also often include a 5th spiritual aether element and also it turns out the wuxing is often just used to describe transitions vs the 8 trigrams are more analagous to the elements but also they don’t fit neatly into the 4 aaaand… it turns out spiritually is complicated and highly culturally contextually, who knew?)
