My go-to recipe, as a general structure, has been as follows:
0:00 (open) - pour up to 3x the coffee weight
0:30 (open) - pour up to 10x the coffee weight
1:00 (closed) - pour up to 16x the coffee weight
1:45 - open valve and drawdown
I’ve been really enjoying the results from this recipe but would like to try some others too. If anyone has a go-to recipe I’d love to hear about it!
I’ve followed James Hoffman’s recipe.
15g coffee. 250ml water, soak for 2:00, drain.
Seems to work well. Simple too.
Ditto. I treat it like my old Clever.
Idk if I’ve been committing a coffee crime, but I’ve been doing this for about 6 months now.
18g (preferably light roast) coffee.
Grind at 16 clicks Timemore C2.00:00 (closed):
pour 350ml water, then coffee, stir
05:00:
Open valve and drawdownAdd 300g ice. Enjoy.
I’ve tried various grind levels and got similar results. The only change was the drawdown time, but if you factor in the temperature when adding ice, it tastes basically the same. I’ve yet to do an A/B test and all observations are compared to the previous day’s brew.
I don’t like hot brews or darker coffee so ymmv
Lance Hedrick’s recipe has water before beans too I think. I’ve done it a few times and it turned out excellent, but the recipe as a whole is a fair bit more complicated so I usually stick with the one I wrote about in the post. Maybe I’ll try your recipe for my afternoon cup today. I haven’t had a good iced coffee in a while.
You only get the extraction percent benefit of this method if you have a second step with it open, else it’s immersion style like an aeropress.
I won’t pass an opportunity to plug my own. Yes, it’s a touch complicated, but no more so than Tetsu’s popular Devil recipe and it’s still my most commonly used daily technique and with practice it’s no more fussy than most v60 recipes:
Ninth Circle Switch Recipe:

- 02:00 Close Switch & 4th pour -120g (to 305g)
- Drop in an ice cube, give a gentle swirl
- 3:15 open Switch (target end of draw down is 4:05)
See full recipe for more details.
If you don’t have an ice cube handy, try Baba’s Brew technique as another delicious option.
I’ve tried a lot of recipes for the switch (it’s my favorite brewer) and these recipes have given me both the most versatility across light and medium roasts, washed and natural process, and for my palate the best blend of nuanced flavor notes and genuinely coffee-like body (not tea-like).
I’ll have to try this one for sure. Probably won’t be my daily coffee recipe but maybe a good weekend brew. Thanks for writing it out!

Smell directly from the carafe and enjoy within 10-15 minuteSince he’s been my main source of coffee for the last few years, I’ve been mainly using his recipe. It’s changed from last year, and I’ve very much been enjoying this new version of it! It really highlights floral and sweet notes which are my favorite 🌟 There’s recipes for additional brews there as well!
Very detailed! I’ll definitely be trying this one soon. I’ll also check out his other recipes too.
I probably make shit coffee but from what I understand, you are supposed to open it only a fraction of the way. When it’s completely open, it forces it through the filter and that’s what makes it bitter.
I fill it to the brim and let it steep for 4 minutes, then slowly draw it out over 30-45 seconds. I try to hit the spot where I’m barely lifting the ball up.
I also heard stirring it help (both when you first put the liquid and then before draw).
Huh, can’t say I’ve ever heard that before but I’m not saying you’re wrong. I’ve always heard when it’s fully open it acts the same as a V60. Maybe I’ll try opening it only slightly and see if I notice a difference.
