This makes me pine for The Egg & I. They had a great Eggs Benedict. Looks delicious.

There’s a lot of extras there that wouldn’t make it an eggs benedict. I think eggs florentine is basically eggs benedict with spinach but without the the bacon/ham. This is also how I would make it at home, I like that it’s not swimming in hollandaise and has greens so you can pretend to be healthy. I’d be so happy to eat this for breaky!
