For those of you wondering what the difference between 'sorbet' and 'sherbet' is, technically a sorbet has no dairy or eggs in it, and sherbet is usually made with milk or may have egg whites. If you're avoiding milk, you could use a non-dairy alternative, such as rice, coconut, almond, or soy milk. Or if you prefer, you can water in place of the milk

Easily one of if not the best chocolate ice creamy things I’ve put in my mouth, including other chocolate ice creams. I made my batch with water so that the chocolate flavor would be more “pure” and added a shot of espresso. It turned out great in my Ninja Creami.

        basically each chapter is a different recipe, and then different flavor variations on that recipe. i liked the thicker, eggier custard recipes best. also the granitas. i really need to get my ice cream machine fixed, or better yet get a new one.
