What exactly is manchego?
It is a delicious soft sheep cheese. I’ve only ever had it on crackers with apples. I hadn’t thought of including it in a quiche!

Hmm, I guess I think of it as soft versus some of the former cheddars that almost shatter when I try to cut them?
