Kirk beat up a Gorn. (Sort of). Vader’s combat armor is nothing.
But, seriously, I doubt there’s much armor there beyond his helmet; it looks mostly like padding. And what does he need armor for? He has the force, and it’s cannon that he can deflect blaster beams. Don’t know how well that’d work for phasers; it obviously has limits, or light sabers wouldn’t be of any use. And armor wouldn’t help against light sabers. So, I’m just not sure there’s much actual armor in his outfit.
not to get too fan-wanky on you… but, eh, Vader is basically permanently bolted into combat armor? a judo chop wouldn’t be enough.
Also, didn’t trek phasers have, like, autotargeting?
Also, Vader has way more stormtroopers than kirk has redshirts. just saying.
Only reason Kirk ain’t to be counted out is… he has Scottie.
The devastating double fist punch is effective against any opponent.

Unless it were made out of Cortosis ore… like a fiber weave mesh would do wonders:-).
Whereas Miles O’Brien’s infinite transporter clone army had yet to be invented at the time…
